Mushroom and Pulse Stew

INGREDIENTS

-2 onions, chopped (I use ready chopped frozen stuff)
- 2 garlic cloves, chopped (I use ready chopped Very Lazy stuff)
- 300g mushrooms, sliced
- 1 tbsp ground coriander
- A can of chopped tomatoes
- 300 ml vegetable stock
- A can of chickpeas
- A can of black eyed beans

METHOD

  1. Fry the onions and garlic until soft

  2. Add the mushrooms and coriander and cook for another 2 minutes

  3. Add the tomatoes, stock, chickpeas and beans. Bring to the boil and then simmer for 15 minutes.

Serve with salad and garlic bread
