Chicken & Veg in a Creamy Sauce

INGREDIENTS

-4 chicken breasts
- 500g baby new potatoes, sliced
- 1l chicken stock
- 1 broccoli, cut into florets
- 2 courgettes, sliced
- A handful of peas
- A small pot of creme fraiche

METHOD

  1. Fry the chicken until it is browned all over

  2. Add the potatoes and stock, cover and simmer for 10 minutes

  3. Add the vegetables and cook uncovered for 5 minutes

  4. Stir in the creme fraiche
