Mushroom, Bacon and Spinach Frittata
INGREDIENTS
-2 packs of lardons
- 500g mushrooms, quartered
- 250g spinach
- 12 eggs, beaten
- parmesan
METHOD
- Fry the lardons and mushrooms until the bacon is crisp 
- Add the spinach and stir until starting to wilt 
- Add the eggs and cook until they are set, about 10 minutes 
- Cover with parmesan and grill for 2 minutes
