Mushroom, Bacon and Spinach Frittata

INGREDIENTS

-2 packs of lardons
- 500g mushrooms, quartered
- 250g spinach
- 12 eggs, beaten
- parmesan

METHOD

  1. Fry the lardons and mushrooms until the bacon is crisp

  2. Add the spinach and stir until starting to wilt

  3. Add the eggs and cook until they are set, about 10 minutes

  4. Cover with parmesan and grill for 2 minutes
