Cheesy Bacon Rice

INGREDIENTS

- 1 onion, chopped (I use the ready chopped frozen stuff)
- 2 garlic gloves, chopped (I use the Very Lazy pre chopped stuff)
- A pack of pancetta cubes
- A pack of mushrooms, halved or quartered depending on size
- 300g brown rice
- 1 ltr veg stock
- 1 can of chopped tomatoes
- 200g grated cheese

METHOD

  1. Fry the onion, garlic, pancetta and mushrooms until the mushrooms have softened and the pancetta is crisp

  2. Stir in the rice fully coating it

  3. Add the stock and tomatoes and bring to the boil

  4. Simmer until almost all the liquid has evaporated

  5. Scatter the cheese over the top and put in an oven for 30 mins at 160 degrees

Serve with salad
