Paellaesque Ricey Thing
Ingredients
- Garlic (I use the ‘Lazy Garlic’ which is already crushed)
- An onion, chopped (I use ready chopped frozen onions as they don’t make me cry and it’s quicker!)
- A chorizo sausage cut into chunks (check if you need to take off the skin)
- 450g long grain brown rice
- Paprika
- White wine
- 1.5l chicken stock
- Frozen peas
- 400g raw prawns
- 250g cherry tomatoes
Method
1. Fry a teaspoon of garlic, one onion’s worth of chopped onion and the chorizo for a couple of minutes.
2. Stir in the rice and a tablespoon of paprika then about half a glass of wine and cook until the wine has gone.
3. Add the stock and simmer for 10 mins.
4. Add the peas and simmer for another 10 mins.
5. Add the tomatoes and prawns and stir until the prawns are pink.
I add some chilli sauce into mine and hubby’s bowls.
