Lamb Stew
Ingredients
- 500g diced lamb
- Plain flour
- Garlic (I use the ‘Lazy Garlic’ which is already crushed)
- White wine
- 2 red peppers (chopped up)
- 250ml passata
- 150ml lamb stock
Method
1. Put a couple of tablespoons of the flour in a bowl and roll the lamb in it.
2. Fry the lamb until it’s all brown.
3. Add a teaspoons worth of garlic and cook for about a minute.
4. Pour in about half a glass of wine and cook until about half of it has evaporated.
5. Add the peppers, passata & stock. Cover and simmer for 30 mins.
Serve with brown rice (I use microwave for time saving)
