Creamy Chicken with Tomatoes
INGREDIENTS
-4 chicken breasts
- 1 onion, chopped (I use ready chopped frozen stuff)
- 2 garlic cloves, chopped (I use ready chopped Very Lazy stuff)
- A glass of white wine
- 200ml chicken stock
- 1 tbs cornflour
- A pack of cherry tomatoes
- 150 ml double cream
METHOD
- Fry the chicken until golden on all sides, then remove from the pan 
- Fry the onion and garlic until softened. 
- Add the wine and cook off the alcohol for about a minute 
- Add the stock and bring to the boil. 
- Stir in the cornflour and bubble until the sauce thickens 
- Add the chicken again, cover and simmer for 10 minutes 
- Add the cream and tomatoes and cook for a couple of minutes more. 
Serve with rice and salad
