Creamy Chicken with Tomatoes

INGREDIENTS

-4 chicken breasts
- 1 onion, chopped (I use ready chopped frozen stuff)
- 2 garlic cloves, chopped (I use ready chopped Very Lazy stuff)
- A glass of white wine
- 200ml chicken stock
- 1 tbs cornflour
- A pack of cherry tomatoes
- 150 ml double cream

METHOD

  1. Fry the chicken until golden on all sides, then remove from the pan

  2. Fry the onion and garlic until softened.

  3. Add the wine and cook off the alcohol for about a minute

  4. Add the stock and bring to the boil.

  5. Stir in the cornflour and bubble until the sauce thickens

  6. Add the chicken again, cover and simmer for 10 minutes

  7. Add the cream and tomatoes and cook for a couple of minutes more.

Serve with rice and salad
