Fish Curry

INGREDIENTS

-Curry paste of your choice, I use a korma paste to keep it mild for the boys but would go spicier if it weren’t for them
- 1 onion, chopped (I use frozen ready chopped stuff)
- A pack of mushrooms, halved
- 400ml coconut milk
- A pack of dried mango
- 750g mixed fish, cubed

METHOD

  1. Fry the onion in the curry paste (about 3 tbsp of it) until they are soft

  2. Add the mushrooms and cook until they are soft

  3. Add the coconut milk and mango and simmer for 5 minutes

  4. Add the fish and cook for another 5 minutes

Serve with rice and/or naan
