Chicken, Tomato, Potato Thing (ideas for better names welcomed!)

INGREDIENTS

-Butter
- 4 chicken breasts cut into chunks
- 450g new potatoes
- Ground coriander
- Ground cumin
- 300ml chicken stock
- 750g mix of cherry tomatoes (halved) and vine tomatoes (quartered)

METHOD

  1. Fry the chicken and potatoes in a big knob of butter until the chicken is golden

  2. Stir in the spices

  3. Add the stock and simmer for 5 minutes with the lid on and 5 minutes with the lid off

  4. Add the tomatoes and cook for another 5 minutes
