Chicken Noodle Soup

INGREDIENTS

- 2l chicken stock
- 2 chicken breasts
- Root ginger (I use Very Lazy ready chopped ginger)
- Garlic (I use Very Lazy ready chopped garlic)
- A pack of fresh rice noodles
- 1 can of sweetcorn
- A small pack of button mushrooms, halved
- A bunch of spring onions, sliced long ways
- Soy sauce

METHOD

  1. Put the stock, chicken, a couple of tsp of ginger and a couple of tsp of garlic into a saucepan and bring to the boil

  2. Partly cover with a lid and simmer for about 20 mins

  3. Take the chicken out and shred then return to the pan

  4. Add the noodles, sweetcorn, mushrooms, spring onions and 4 tsp of soy sauce

  5. Simmer for 4 mins

I add some chilli sauce in mine and hubby’s bowls
